• 3 Medium carrots, julienned
  • 2 ripe avocados
  • 1/4 white onion, diced
  • 1 tomato, sliced
  • 3 cups edamame, cooked in boiled water 3-5 minutes
  • 2 watermelon radish, sliced
  • lemon juice, 1 lemon
  • a pinch of salt
  • a pinch of pepper
  • a pinch fresh dill, chopped



  1. In a medium bowl add in the avocado and mash it to create a textured mixture of avocado. Add in the onions and a pinch of salt. Mix all ingredients until you have a smooth mixture.
  2. In a separate bowl add in the cooked edamame and add in the sliced watermelon radish. Add in the lemon juice, dill and a pinch of salt + pepper. Mix salad and serve in a bowl.
  3. Wash and let your kale dry out. Once the kale is dry add in the carrots, guacamole and tomato slices. Wrap up the kale into wraps and serve with the edamame salad.  Enjoy:)
