WILD RICE VEGGIE BOWL

SERVES 4

 

INGREDIENTS

  • 2 cups wild rice
  • 4 cups vegan vegetable broth
  • 4 cups organic lacinato kale, chopped
  • 4 cups radishes, sliced
  • 4 cups red cabbage, chopped
  • 4 cups sweet potato, roasted
  • 2 cups turnips, roasted
  • 1 cup chives, chopped
  • 2 cups microgreens

AVOCADO SAUCE INGREDIENTS

  • 1 large lemon
  • 1 ripe avocado
  • 1 teaspoon Dijon mustard
  • 1 teaspoon coconut syrup
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon pepper
  • 1/2 cup water
  • 1 teaspoon salt
  • 1 teaspoon lemon zest
  • 1 teaspoon onion powder
  • 1 garlic clove
  • 1 teaspoon lemon zest

 

WILD RICE INSTRUCTIONS

  1. Boil 4 cups of vegan vegetable broth in a medium saucepan. Once vegetable both is boiling add in your wild rice. Make sure to have cleaned and rinsed out your wild rice thoroughly before adding it in.
  2. Allow the wild rice to cook for about 25 minutes. Check to make sure all the vegetable broth has evaporated and wild rice is soft. Set wild rice to cool down,

 

AVOCADO SAUCE INSTRUCTIONS

  1. Add in all the ingredients to the vitamix and blend on high. Blend all ingredients until you have a smooth mixture. Place sauce in a container.

ROASTED VEGGIES

  1. Place sweet potato and turnips in a baking sheet. Sprinkle salt and olive oil to them . Allow them to roast for about 25 minutes.

BOWLS

** Assemble your bowls by adding in the wild rice, roasted turnips, roasted sweet potatoe, sliced radish, chopped red cabbage, chopped kale, microgreens, chives and avocado sauce. enjoy:)
