STRAWBERRY CHIA PUDDING BREAKFAST BOWL

MAKES 2 BOWLS

 

INGREDIENTS

 

  • ½ cup strawberries
  • 1 ½ cup coconut milk
  • 2 teaspoons vanilla extract
  • 4 tablespoons chia seed

 

TOPPINGS

 

  • Gluten free granola
  • strawberries
  • Dark chocolate (optional)

 

INSTRUCTIONS

 

  1. Add coconut milk and chia together in a mason jar. Place in refrigerator and leave to thicken for at least 30 minutes. You may leave them overnight as well.
  2. Mash strawberries and add half of the chia pudding into a bowl. Mix well and evenly. Continue to layer up the bowl with the chia pudding and mashed up strawberries.
  3. Add your toppings to your bowl. Add in gluten free granola and strawberries. Dark chocolate bits blends in perfectly in this bowl. enjoy:)
